Canning is a simple process that is often made out to be much more complicated than it actually is. It is an age-old method for preserving food using boiling water or steam to create an airtight seal inside a glass canning jar containing the food you wish to preserve. The complicated part of canning is mastering all the ways that food can be processed before it is canned and stored on your pantry shelf. Follow your recipes for foods that you are canning; especially when it comes to ingredients like sugar, pectin, salt, citric acid and vinegar. The ingredients play a key role in preservation.
So, which type of canning device do you need to use? Water bath canners are essentially a large pot with a metal rack on the bottom to support Mason jars, are suitable for fruits, which includes tomatoes. Canning vegetables and animal products is best done with a pressure canner which will reach the temperature necessary to preserve these foods safely. Also, use a pressure canner for recipes where you have fruits and vegetable mixed.
For both types of canning devices you will need Mason jars (with lids and bands), a jar funnel, canning jar tongs, oven mitts and something along the lines of a plastic spatula. The rubber gasket on mason jar lids is the key component responsile for sealing out air and preventing spoilage.
